I have been wanting to bake all day. I bought a cookbook I’ve been wanting called “Vegan Cupcakes Take Over The World.” (There’s a blog, too!) I went to the grocery store after the gym today to buy more ingredients for the specific thing I wanted to make at which point I noticed the aforementioned theft. Grrrr… But it turned out I had the makings for something else delicious that also allowed me to use more of the pumpkin I have in the fridge from last weekend. I made… Vegan Pumpkin Chocolate Chip Mini Bundts with a Cinnamon Glaze. I haven’t been able to take any appetizing photos yet so you’ll just have to imagine the adorable autumny goodness. Mmmm… Now only one more cup of pumpkin to go. Perhaps I’ll make this.
